Apricot Glazed Pork Tenderloin

This recipe is 3 for 3 when it comes to the most important qualities of a recipe...fast, healthy and delicious.  It takes about 30 minutes from start to finish.  I've only recently started making this, and I have had lots of requests for the recipe...so here it is:

2 Pork Tenderloins, 1 lb. each
2 Tbsp. olive oil
1/2 tsp. salt
1/4 tsp. pepper
1 c. apricot preserves
3 Tbsp. chicken broth
1 Tbsp. Dijon mustard
2 garlic cloves minced or 1/4 tsp. garlic powder
1 tsp. fresh Thyme or 1/4 tsp. dried thyme

Preheat oven to 450 degrees
Place pork on a shallow roasting pan.
Combine the oil, salt and pepper.  Rub on the pork.
Bake at 450 degrees for 15 minutes.

Meanwhile, combine the remaining ingredients in a small bowl.  Spoon apricot sauce over the pork.  Bake for 10-15 minutes longer.
Serves 6
Done...and it is seriously DELICIOUS.  Kids eat it like it's candy!
