Corn, Rice and Bean Burritos

I'm making out my weekly menu, so Ella and I can do our shopping in the morning.  If you don't plan out your meals, you should give it a try.  We save so much money...and so many last minute trips to restaurants because we always know ahead of time what's for dinner that night.  This recipe is really yummy...healthy, inexpensive and easy.  What more could you ask?  My kids love it too, which is always nice.
 
Ingredients:
1 1/3 c. frozen corn, thawed
1 med. onion, finely chopped
1 med. green pepper, finely chopped
1 Tbsp. oil
2 garlic cloves, minced
1 1/2 tsp. chili powder
1/2 tsp. ground cumin
1 can black beans, rinsed and drained
1 1/2 c. cooked brown rice
8 flour tortillas, warmed
3/4 c. shredded cheddar cheese
1/2 c. reduced-fat plain yogurt
2 green onions, sliced
1/2 c. salsa

In a large skillet, saute the vegetables until tender.  Add the spices, cook 1 min. longer.  Add beans and rice; cook until thoroughly heated.  Spoon about 1/2 c. filling onto each tortilla.  Top with cheese, yogurt and green onions.  Roll up burrito style.  Serve with salsa (and chips!).

Oh...and while you're here...vote for your pick for the Super Bowl.  I'm torn...do I go with my husband and root for the Steelers...or go with Aidan and root for the Packers?  Isn't there a law against Cowboys fans rooting for the Steelers?

Stability of Heart

God and I have been doing some work on my heart lately.  Thanks to a great book by Beth Moore, So Long Insecurity, and more and more time in his word, I feel like I am finally winning a life long battle I've had with insecurity, doubt and fear.  Several people have been surprised to find that I struggle with this.  I guess mine doesn't always present itself in the typical way.  Mine presents itself in rabid perfectionism.  I am crippled into doing nothing because I fear not doing it perfectly.  If you struggle with this too, I highly recommend the book.  It doesn't just teach you about insecurity, it provides some very practical steps to conquer it once and for all.  What it boils down to, is all of my stability and security comes from Him.  It is taking lots of prayer and hiding God's word in my heart, but I have made lots of progress.  This is my current memory verse (I'm going to try to type it from memory!):

He will have no fear of bad news; his heart is steadfast, trusting in the Lord.  His heart is secure, he will have no fear; in the end he will look in triumph on his foes.  Psalm 112: 7-8
(Okay, I had to peek...I need more work on that one!)


I can't wait to look in triumph on this particular foe!

"You will find stability at the moment when you discover that God is everywhere, that you do not need to seek Him elsewhere, that He is here, and if you do not find Him here it is useless to go and search for Him elsewhere because it is not Him that is absent from us, it is we who are absent from Him.  This is important because it is only at the moment that you recognize this that you can truly find the fullness of the Kingdom of God in all its richness within you; that God is present in every situation and every place, that you will be able to say:  'So then I shall stay where I am.'"

Thoughts on the State of the Union

Don't worry, this will not be a political post...I save all my political rantings for Mark and my closest friends, and I know they appreciate it.  Today, I just wanted to share a few observations about the State of the Union last night.

First, I always feel that it is my duty as an American to watch these things.  I like to be well informed.  But, any time I watch any politician speak, I don't feel like I know any more than I did in the beginning.  They tell you all these things that sound GREAT.  But, give no real specifics on how or if any of it can actually happen in reality.  And, last night's was LONG.  Poor John Boehner.  I think he was just about bored to tears...and tears are never far off for him.  How embarrassing would that be to cry during the State of the Union?  Come to think of it, why do they make the VP and the Speaker sit behind the president the whole time?  I hate being on camera...especially when I'm not doing anything but sitting.  You always get hyper aware of every facial expression or twitch.  Heaven forbid your nose itch, or you choke on your own phlegm.  I have to say, I was missing good ole' Nancy Pelosi last night.  She was so entertaining.  She was always doing some weird twitch or excessive weird blinking.

I also started to wonder last night about the wisdom behind having the president, the VP and the Speaker all together like that.  Who is 4th in line?  I should know that, right?  I told Mark, many times, that I did not think they were supposed to all be together like that.  To which he replied, "they always are for this," every time I said it.  I don't think he was hearing me.

The most irritating thing to me about State of the Union Addresses, or really any political address, is all the personal stories.  You know, when they say, "this makes me think of Sally Rogers, from Fort Worth, Texas who was living on the streets with her 4 kids and a 3-legged dog.  Then, I became President and now she lives in a mansion and her dog has been completely healed."  All presidents from both parties do it, and it makes me laugh.  Where do they find these people?  They act like they know them personally and have spent all this time with them.  I don't know this, but I suspect they send out researchers to search these people out, just for their little stories.  Did you see the lady last night?  When Obama started talking about her she looked to the person on her right and said, "that's me!"  Then a few seconds later, she turned to the person on her left and said, "that's me!"  I think we backed that up and watched it about 3 times.  We are easily amused.  I got the feeling that Biden wanted to do the same thing when Obama mentioned him.  He got really excited.  I know he wanted to turn to Boehner and say, "that's me!"

The most interesting thing I found out last night is that both the Department of the Interior AND the Department of Commerce are in charge of Salmon, depending on if they are in fresh water or salt water. I know Obama pointed this out in order to say the government needs to be more streamlined.  But, what I want to know, is why is the government in charge of salmon??  Really?  Do they pay taxes?  Are we protecting their civil rights?  Issuing them passports?  George Washington would be choking on his wooden teeth.

After the speech, all the "analysis" starts.  This really drives me crazy.  I think there should be a rule that no one is allowed to talk about the speech for one hour...give people some time to process it on their own, instead of telling them what they are supposed to think about it.  Maybe it's the teacher and the mom in me, but sometimes when all that garbage is on, I want to ring a bell and say, "excuse me!  this is a no talking time.  Everyone do your OWN work."

I think the State of the Union should have more facts...like, this is how much we're spending, this is how much we're bringing in.  This is how the war is going, this is how much we spent on education, and this is how it turned out.  Instead, it's a whole lot of this is what I want to do, this is what I think we should do, with only a fact or two thrown in here or there.  Our founding fathers were not being creative or catchy when they named it the State of the Union.  They didn't consult advertisers or PR people to help them find a serious sounding name.  They called it the State of the Union, because the president is supposed to tell Congress and the American People the State of the Union.  Instead, it's like a sports highlights reel of all the things the politicians want to pat themselves on the back about.  That is only my opinion of course...but I'm a facts and numbers girl.  Just give it to me straight and save reelection speeches for the campaign trail.

Finally, I will agree with Obama, I am so glad we live in a country where we get to argue and fight and bicker about politics.  That means we still have a choice!  Go USA!!  Whatever state the union is in, I'd rather live here than anywhere else on earth!

Football Food

It's almost Super Bowl time!  I should remove that exclamation point...I'm really not that excited about it.  I don't really care about either of the teams.  Mark is excited because his Pittsburgh Criminals, I mean Steelers, (sorry...after all the jokes about the Dallas Cowboys, I had to) have made it to their 7th 8th Super Bowl.  (Mark corrected me!)  Aidan is excited because he decided, just this weekend, that the Packers are his favorite team.  Gag.  But, it will be fun to get together with some friends, eat some football food and watch the commercials, I mean, the game.  At least I hope we're getting together with friends...if you're my friend and you're reading this, please plan something.
Anyway...last night in honor of the play off games we had a very healthy dinner of potato skins, mozzarella sticks and nachos.  Mark was very excited.  I've learned a lot in these last several years of cooking for him...keep it simple...think bar and grill...that's what he gets most excited about.  The potato skins may have made him more excited than just about anything I've ever made.  I've been asked to make these for the Super Bowl.  They were simple to make, and very tasty...so I thought I'd share.

Potato Skins:
yield: 12 potato skins

6 small to medium sized potatoes
3 Tbsp. oil
1 Tbsp. Parmesan Cheese
1/2 tsp. salt
2 cloves garlic, minced
1/4 tsp. paprika
1/8 tsp. pepper
real bacon bits
4 green onions, chopped
1 1/2 c. shredded cheddar cheese (buy a block, shred your own, it makes all the difference in the world!)
sour cream

Bake the potatoes.  Slice them in half and scoop out the potato, leaving about 1/4" in the shell.

Mix together the oil, Parmesan and spices.  Brush onto both sides of the potato skins.

Bake at 475 degrees for 7 minutes, turn over and bake another 7 minutes.

Sprinkle cheese, bacon and green onions into the shells.  Serve with sour cream.

I'll also share the recipe for the mozzarella sticks...I overcooked mine a little, so watch them carefully.  The ones that were just barely golden brown were the best.

Mozzarella Sticks:

10 mozzarella cheese sticks
1 1/2 c. Italian bread crumbs
1 c. shredded Parmesan
1 tsp. salt
4 eggs, beaten
1 1/2 c. oil

Mix bread crumbs, salt and Parmesan.  Dip a cheese stick in egg, let excess drip off, then coat with bread crumb mixture.  Place on baking sheet.  Repeat with remaining cheese sticks.  Dip each cheese stick a second time in egg and then bread crumb mixture to get a good coating on them.  Put them in the freezer for 2 hours.

Heat oil in a skillet.  Cook cheese sticks about a minute on each side, or until golden brown.  Serve immediately.

I was looking at some old notes I have on Facebook and I came across one called "A 6 Year Old's Perspective."  It made me curious how Ella would answer the same questions at almost 3 years old.  I've posted the questions.  Aidan's answers from when he was 6 are in blue.  Ella's answers are in pink  All the answers are direct quotes, so some of them don't make sense!

Some More Things I've Heard Lately:

Ella:  I want my godmother to bring me a cowboy on a horse.  (she's probably not alone in that, am I right ladies?)

Aidan:  I can't see my head because my eyes are way down here!  (huh?)

Ella:  Dear God, thank you for my bottom.  Amen.

Ella:  My bottom itches, but my fingers are GOOD scratchers.  (eww!)

Aidan:  I think Pawpaw should be president.  He's 6'4", skinny, honest and courageous.  So, he would be a good president.

Ella:  Let's get Sam's college (collar) and sleesh (leash) and take him for a walk.

Me:  Ella, let's go take a nap.
Ella:  I don't want to take a nap.
Me:  But, naps help you grow into a big girl.
Ella:  And then I can hold a big knife?

Ella:  (while drinking chocolate milk)  My tongue LOVES chocolate!  (I can relate)

Ella:  (at the grocery store...referring to a 40-something woman)  Hey mommy!  Look at that old lady buying eggs!  (not said in an "indoor voice" either!)

Ella:  sigh...I'm going to tell Mark I need to go potty.  (Don't you mean daddy?)

Ella:  (as Aidan was putting 2 quarters in a pencil machine) Hey!  You can't do that!  Those are God's quarters!!

Ella:  (to her Pawpaw) Your socks are so excited because they're so big!

Aidan: (while trying to play wii the smoke alarms went off)  Are you serious?  I can't work under these conditions!!

Aidan:  (to the opposing basketball team on Wii sports)  What's up pig, what's up?  What's that even mean, anyway?  (He has great trash talk while playing video games.)

Mark:  (while on his way to Worship rehearsal)  You obviously don't understand what it's like to rock for Jesus.  (still laughing about this one.)

Mommy Issues?

So, I've been noticing over the last several months, that EVERY time Ella pretends she imagines a daddy and a daughter.  Sweet, huh?  But, there's NEVER a mommy.  In fact, for Christmas, she got a doll house with a mom, a dad and 2 daughters.  But, she pretends it's a dad and 3 daughters.  When she plays horses, they are named Daddy and Sweetheart.  When she plays dinosaurs, it's a daddy and his daughter.  No matter what she's playing with, there's always a dad, and never a mom.

Of course, Mark loves it.  I think it's pretty cute too.  I have to admit, I've been kind of scared to ask her where the mommy is!  But, today, she was playing with 2 dinosaurs, and they were "Daddy" and "Daughter."  She had the "daughter" dinosaur come up to me and say, "Help me find my daddy."  I said, "Your daddy is over there."  Seeing my opportunity, I said, "where is your mommy, little dinosaur?"  She said, "She's not here."
"What happened to her," I asked.
"The dragon took her."
"Should we go rescue her?"
"No."

I'm not sure what it means, but I'm saving this post for her future therapist.  Or my future therapist.  Whichever comes first.

Ella Speaks

Ella always has something to say...and it's usually sassy!  Here are some jewels from Ella recently.

Me:  Ella, you need to eat your soup.
Ella:  I can't.  I'm writing a story.
Me:  You are?
Ella:  It's called, Ella Doesn't Want to Eat Soup


Ella: (to the Christmas tree)  Trick or Treat!


Ella:  Only doctors wear pants to church.  (while I was trying to convince her to put on pants...but not for church!)

Ella:  (singing)  You can't take down the tree.  I love the ornaments.  I fall asleep counting my blessings; blessings of the tree and I love it.  It is so very branchy.

Ella:  sigh...I am a beautiful mess.  (yes, yes you are!)

Ella:  Santa, I want a horse and a pig in a little tea cup and a puppy and another puppy and another puppy.

Me:  (while having pictures with Santa)  Ella, it's time to go. It's someone else's turn to see Santa.
Ella:  No, I'll stay here.



Ella:  (on Christmas morning)  Where is Santa?
Me:  He left the toys and went back to the North Pole.
Ella:  But, I want to tell him thank you.

Me:  Ella, what kind of birthday party do you want to have?
Ella:  Pink
Me: What kind of cake do you want to have?
Ella:  Pink
Me:  Who do you want to come to your birthday party?
Ella:  Daddy

Ella:  I want a toy (in the McDonald's drive thru)
Me:  We're not getting a toy today.
Ella:  (screams)  I WANT A TOY!
Me:  I want some peace and quiet
Ella:  I WANT A TOY
Me:  You're not getting a toy.
Ella:  You're not getting peace and quiet!

Ella:  Sam is my dog.
Aidan:  No, Sam is a family dog.
Ella:  No, Sam is an Ella dog.

Open Our Eyes

"Then he sent horses and chariots and a strong force there.  They went by night and surrounded the city.  When the servant of the man of God got up and went out early the next morning, an army with horses and chariots had surrounded the city.  'Oh, my lord, what shall we do?' the servant asked.  'Don't be afraid,' the prophet answered.  'Those who are with us are more than those who are with them.'  And Elisha prayed, 'O Lord, open his eyes so he may see.'  Then the Lord opened the servant's eyes, and he looked and saw the hills full of horses and chariots of fire all around Elisha."  2 Kings 6:14-17


Have you ever felt surrounded?  Out numbered?  Scared out of your wits?  Crippled with worry?  Alone?  Wouldn't you love to have your eyes opened to all that's going on around you in the spiritual realm?  Look with eyes of faith.  God has "commanded his angels concerning you to guard you in all your ways."  There is an enemy of your soul that doesn't want you to know that.  What could you do if you really knew that God had your back?  It doesn't mean you'll never have trouble.  Jesus said "in this world you will have trouble."  Not, "you might" have trouble or "you could" have trouble, but "you will."  But, for the one that fears the Lord, there is no need to fear anything else.  "'Because he loves me,'" says the Lord, 'I will rescue him; I will protect him, for he acknowledges my name.  He will call upon me, and I will answer him; I will be with him in trouble, I will deliver him and honor him.'"  I hope that gives you peace.  I hope it gives you security.  I hope it gives you boldness.

Maybe in this physical world, you are a pacifist...a lover, not a fighter.  But, make no mistake, we are in a spiritual battle with a vicious enemy that wants to devour us...destroy us, make us ineffective, cripple us.  His weapons are fear, insecurity, bitterness, discontent and hopelessness.  So, "be self controlled and alert.  Your enemy the devil prowls around like a roaring lion looking for someone to devour." 1 Peter 5:8.  He is evil.  That should make you angry.  That should make you want to fight...for yourself, for your marriage, for your kids.  It should make you angry, but not discouraged.

Sometimes, especially in our American culture, we are so numb and unaware of what is going on around us.  We are like the king in the Lord of the Rings trilogy.  I don't know his name, because I can't remember details like that...but Mark would know.  You know the one who is completely glazed over and just kind of going with whatever he's told.  Don't you want to slap him?  Don't you want to shake him and say, "wake up!  Get in the game!  The stakes are too high!!"  Well, if you feel like him...if you have no vision or purpose for your life, if you're just living the way our culture tells us we're supposed to live, consider yourself slapped!  You have nothing to fear.  Start living the life God intended you to live.  Not one of fear or complacency or meaninglessness.  But, a life full of joy and purpose.  Get in the game!  The stakes are too high!  And, do not be afraid.  "For God did not give us a spirit of timidity, but a spirit of power, of love and of self-discipline."  2 Timothy 1:7  So get out there and LIVE like the very spirit of the creator of the universe dwells inside you, because it does.  Angels are camped around you right now, ready to battle on your behalf.  If that doesn't excite you, I don't know what will.

I am praying that God will open our eyes to spiritual battles raging all around us and give us the courage to get in there and fight...because the victory is already ours!  I think that deserves a hallelujah.

Camping Party and Other Stuff

So, I am way behind on my blogging.  I have several posts brewing...about Aidan's birthday, Christmas, New Years, etc...but, I can't seem to get it together.
For one thing, my house has been a disaster since Christmas, and I can't seem to catch up.  It's like shoveling snow during a blizzard, and I'm beginning to wonder why I bother.  Apparently, the people I live with don't mind living in a sty, so why should I care??  It's like a frat house around here...dirty dishes and underwear everywhere I look!

On a side note...I put a poll on my page...I'd love for you to weigh in on this very important topic.  Please tell me I'm not the only one with Christmas decorations still up!  This may be the longest they've ever been up.  I blame the new puppy.  I'm hoping to do a poll on a weekly basis, but we'll see...maybe no one will vote and then I will be sad and refuse to do another one in protest!

Now, to the point of this post.  I threw Aidan a very successful birthday party this year.  (Hey, it's not bragging if it's true).  So, I thought I'd share with you what I spent hours scouring the internet to find, in case you would like to throw a similar party for your birthday boy (or camping enthusiast girl!).

First, the invitations I made were cute, easy and cheap.  I did not take a picture of them.   Sorry.
I used camouflage scrap booking paper, cut it into rectangles and folded it to look like a tent.  Then, I put cute camping stickers on the outside.  The party info was on the inside.  I think the inside read something like, Camper Aidan is turning 8 and you're invited to camp out late!  Then, I included "essential camping gear" "report to the mess hall for hot dogs @ 6:30," etc.  I gave kids the option of spending the night or going home at 9.  Most chose to spend the night.

For food, we roasted hot dogs over our fire pit outside.  We had chips to go along with the hot dogs.  I did not do much else, because I knew the kids would be too excited to eat much, and I was right.  Later in the night we roasted marshmallows.


For the games, I divided them into 2 teams, so there weren't too many wild boys trying to play one game at a time.  To make dividing into teams easy, I bought orange and green bandanas and wrote "Camp McAlister" on them and the date.  I put them in a bucket and the kids had to draw one out.  Each team had a bag of camping loot that they had to find using clues that I had written.  The loot was in a pillow case tied with the matching color bandana.  The loot included green and orange glow necklaces and glow sticks, green and orange whistles, compasses, candy and snacks, and some camping silly bands that my mom found at the Import Store in Fort Worth.

Next, the groups rotated through the other games.  For one, we did "Search and Rescue."  I took Aidan's small tent and filled it with balloons.  I put it in a dark room.  Mixed in with the balloons were more prizes, like slinkys, silly bands and candy.  They had to use their flash light and dive into the tent one at a time.  They had 30 seconds or so to find as many prizes as they could.

Another game was fishing.  I cut out 50 fish shapes and glued them together with a prize inside.  The prizes included candy, lizards, bugs, and frogs.  I stapled a small loop of pipe cleaner in the mouth.  I made fishing poles out of sticks with twine.  I bent a paper clip into the shape of a hook and tied on the end of the twine.  The kids had to fish for prizes.  They loved this, and some even became obsessed with it.

I was really happy with how it turned out, and Aidan loved it.  I am far from a professional cake decorator, but I love making the kids' birthday cakes, and they love it too.  For the tent, I used chocolate pop tarts and stuck them together with icing.  The river is just icing tinted blue with crushed pecans to look like rocks around the sides.  The trees are sugar cones with icing on them.  All the kids wanted to eat one of those trees!  For the fire, I used pretzels to look like logs.  Then I stuck some of the candles down in the fire pit, so when they were lit it looked like a real camp fire.  For the grass, I didn't have the right decorator tip, so I poked some holes in a ziploc bag with a toothpick and squeezed the green icing on that way.  It was very quick; it really took hardly any time at all to get all the grass on.  The cake was a big hit with all the kids.

Next we opened presents.  Then, all the formal parts of the party were over.  A few kids went home at 9.  The rest played flash light tag in the back yard and roasted marshmallows.  Then they got into their pajamas and sleeping bags, watched a movie, ate popcorn and went to sleep...but not before giggling wildly at several bursts of potty humor.  Aidan said it was the best party ever.  It was easy, fun and inexpensive for us too.

Meet Sam

Samson, or Sam for short, is the newest, most high maintenance member of our family.  There is a reason that God made puppies cute.  It is to make up for their total lack of concern for the needs or rights of others.  It was so their owners did not throw them out on the street in the middle of the night when it is 22 degrees outside.

He's actually a really sweet dog.  But, he's a puppy.  Which means he chews and jumps and cries through the night and has to pee at 3:00 in the morning when it's freezing outside. 

The kids have been wanting a dog for a long time.  We always said no, since we already have 2 cats and a bird and 2 recently departed hermit crabs.  Aidan didn't really care for dogs very much when he was little, because he was exposed to some really wild ones that scared him.  He was more of a cat person.  But, over the last year or so, he's really been wanting a dog.  Ella has been crazy about dogs from the get go.  One of her first words was, "puppy."  I really wish you could hear how cute she was when she would say it as a baby.  It would make even the most cold hearted anti-dog parent melt.  So, over Christmas break, we finally caved and got this puppy.  Ask me in a few months if it was a good idea or not.


He's been a pretty good puppy.  But, he has separation anxiety at night and sleeps very little...and cries very loudly.  There really isn't anywhere in our house where we can't put him so that no one can hear him.  So, he not only wakes Mark and me up, he wakes up Ella.  (Nothing wakes Aidan up)  The last few days, we have spent trying our best to wear him out to complete exhaustion, hoping he will sleep.  It's helping a little.  I'm not sure if he's so exhausted that he sleeps, or if we're so exhausted that we fall into a slight coma and can't hear him.  Everyone assures me that this will pass when he gets used to his new home!

Other than that, we are really excited about Sam.  He loves to go on walks and ride in the car.  He chases the kids all over the back yard and around the kitchen table.  He falls asleep in your lap and makes funny faces when he dreams.  He has that wonderful puppy smell, and a soft puppy belly.  Ella and I have a lot of fun taking him on walks during the day, and all of us walk him to the park in the evening so he can play with the kids.  He loves going down the slide in Aidan's lap and will run to the top of the slide over and over again.  He tries really hard to play basketball, but usually just ends up rolling all over with the ball.  He makes the kids laugh big belly laughs and makes our cats walk around with huge puffy tails and looks of disgust on their faces.  He's scared of Aidan's tiny pink dinosaur and growls and barks every time he walks by it.  If you turn on the vacuum, he starts shaking and will hide behind my legs.  He has big ears and bright blue eyes, and we love him...during the day...not so much at 3 am!
